Vegan Sweet Potato Casserole
Do you ever buy a bunch of some produce without any real plan for what to make with it? I bought a bunch of sweet potatoes with half a plan to roast them, but they sat on the counter. Then I saw Caitlin Shoemaker’s recent video for sweet potato recipes… and I suddenly knew what I was doing with those sweet potatoes that had been lounging around on the counter.

So, back to the casserole. It was super-easy and I made it for a weeknight meal. If you are feeling super dessertish, add a drizzle of maple syrup. *drool* By the way, these are vegan marshmallows called Dandies. They are so good! I like the texture of them compared to regular marshmallows and the taste is pretty close!
