Vegan and Gluten-Free Banana Bread

Yesterday I wrote about what I’ve been eating lately and how I found a new recipe for banana bread by Loopy Whisk. Well, I made it and it really is the best recipe I’ve tried. I’m thinking that adding lemon juice super powered the baking soda, making it so fluffy. I had a piece while it was still warm and my husband ate two pieces.

I suspect this will make it into the regular rotation because this bread is so good and easy to make! With the weather changing to fall and winter, I start thinking about banana bread and there’s even a recipe for pumpkin bread. If you haven’t checked out the Loopy Whisk cookbook, you definitely should. I haven’t made every recipe (yet) but the bread ones have been great! I’m planning to make hamburger buns today for our vegan burgers. Mine aren’t as pretty, but they definitely are tasty! My husband even eats the bun separately because he wants to enjoy the bread by itself.
