Quick and Easy Meals
If you’re like everyone else, you’re also looking to reduce the stress of having to cook all the time. Last night as I was making dinner (AGAIN! Why must we have to feed ourselves multiple times a day?!!) I was so annoyed. What to make with what we have? We can’t just pop out to the store for fresh whatever a recipe calls for, assuming the store even has it in-stock. (There’s hardly any bean burgers anywhere and tofu has practically gone extinct!)
Annoying, right? I’ve been in kind of a rut and find myself wishing I could just hit a drive-thru or eat a frozen pizza like everyone else. But there’s not much point in whining, I guess. So, I’ve gone through my cookbooks to see what I can make with what we have, and getting back to basic recipes that don’t cause me stress.
I made a big batch of pesto, probably enough for 5 meals x 4 people. We eat a lot of baked oatmeal and energy balls. See my recipes page here . There’s also chickpeas with whatever salad veggies are in the fridge, with Greek dressing. Roasted veg (sweet potatoes, Brussels sprouts, broccoli, or carrots) with pasta and homemade vegan Parmesan. Cold quinoa with plant milk, blueberries, and a bit of syrup.
I really need to get back to posting more recipes, but I haven’t had the mental or physical energy to create new recipes or post my adaptations to recipes.
