Mason Jar Salad
This isn’t so much a recipe as a good idea for a fast (and cheap!) meal. I went to Aldi on Monday and I found bell peppers, cucumbers, tomatoes, among other things but this is what I used in my salad in a jar.
I added about 1/3 of a can of chickpeas, then a bit of chopped red onion. On top of that was cucumber bites, green bell pepper, and lots of tomatoes. You could add more or less of your favorite veggies and then store in the fridge. I made enough for 5 lunches because I never get tired of salad. I pour on some of my favorite Greek Salad Dressing just before I am ready to eat it, shake it all up, and it’s the quickest lunch for me.
